Ingredients

  • 2 lbs ground beef
  • 1 medium onion, chopped
  • 1 to taste Famous Dave's or Red Ranch seasoning
  • 4 cloves garlic, minced
  • 1 4-oz can green chilis
  • 2 cups dry macaroni
  • 2 cups beef broth
  • ½ cup sour cream
  • ½ cup cream cheese
  • 1 ½ cups smoked cheddar cheese, shredded
  • 1 ½ cups smoked Monterey Jack cheese, shredded

Instructions

  1. In a large skillet or Dutch oven, brown ground beef and chopped onion over medium-high heat until nearly cooked through.
  2. Drain excess grease. Season generously with Famous Dave's or Red Ranch seasoning.
  3. Add garlic, green chilis, dry macaroni, and beef broth. Stir to combine.
  4. Bring to a simmer, cover, and cook for about 15 minutes, until macaroni is tender.
  5. Stir in sour cream and cream cheese until melted and creamy. Adjust quantities to taste.
  6. Add shredded smoked cheeses and stir until fully melted and incorporated.
  7. Serve hot, garnished with chopped parsley or green onions if desired.
