Ingredients
- 2 pounds gold potatoes, sliced 1/8 inch thick
- 1 ½ cups heavy whipping cream
- 4 ounces soft goat cheese
- 2 ½ tablespoons roasted garlic paste
- 1 ½ cups whole milk
- 2 tablespoons fresh chives, chopped
- 3 ounces Parmesan cheese, grated
- 1 to taste salt
- 1 to taste pepper
- ¾ pound sliced ham, cut into bite-sized pieces (optional)
Instructions
- Preheat the oven to 400°F.
- In a large bowl, whisk together the heavy whipping cream, grated Parmesan cheese, and soft goat cheese until the goat cheese is mostly broken up and the mixture is well combined.
- Whisk in the roasted garlic paste.
- Add the whole milk and chopped chives, then mix thoroughly.
- Season the liquid mixture with 1.5 teaspoons of salt and 1.5 teaspoons of pepper, or to your liking.
- Gently add the thinly sliced potatoes to the cream mixture, a little at a time, tossing as you go to ensure they are all evenly coated.
- Butter a cast iron pan or 9x13-inch baking dish.
- Arrange a single layer of potatoes on the bottom of the pan. If using, top with a layer of the bite-sized ham pieces.
- Continue layering the potatoes and ham until all the ingredients are used.
- Once layered, pour the remaining cream mixture evenly over the top of the potatoes.
- Bake for 1 to 1.25 hours, or until the potatoes are tender and the top is golden brown and bubbly.
