For the Loaded Baked Potato Chips with Bacon, Cheddar & Chives

Ingredients

  • 5 medium Red Potatoes
  • 3 tablespoons Extra-Virgin Olive Oil
  • 1 to taste Kosher Salt
  • 1 to taste Freshly Ground Black Pepper
  • 6 pieces Cooked Bacon, Crumbled
  • 1 cup Shredded Cheddar Cheese
  • ½ cup Sour Cream
  • 3 tablespoons Chopped Chives

Instructions

  1. Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper.
  2. Slice potatoes into 1/4-inch-thick rounds.
  3. Brush both sides of each slice with olive oil and arrange in a single layer on the baking sheet.
  4. Season with salt and pepper.
  5. Roast for 15–20 minutes until golden on the bottom.
  6. Flip slices and roast another 12–15 minutes until golden and crisp.
  7. Remove tray from oven and top each chip with 1/2–1 teaspoon crumbled bacon and 1 teaspoon shredded cheddar.
  8. Return to oven and bake for 6–8 minutes until cheese is melted and bubbly.
  9. Let cool for 5–10 minutes.
  10. Garnish each chip with 1/2 teaspoon sour cream and 1/4 teaspoon chopped chives.
  11. Serve warm or at room temperature.
