Ingredients
- 5 medium Red Potatoes
- 3 tablespoons Extra-Virgin Olive Oil
- 1 to taste Kosher Salt
- 1 to taste Freshly Ground Black Pepper
- 6 pieces Cooked Bacon, Crumbled
- 1 cup Shredded Cheddar Cheese
- ½ cup Sour Cream
- 3 tablespoons Chopped Chives
Instructions
- Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper.
- Slice potatoes into 1/4-inch-thick rounds.
- Brush both sides of each slice with olive oil and arrange in a single layer on the baking sheet.
- Season with salt and pepper.
- Roast for 15–20 minutes until golden on the bottom.
- Flip slices and roast another 12–15 minutes until golden and crisp.
- Remove tray from oven and top each chip with 1/2–1 teaspoon crumbled bacon and 1 teaspoon shredded cheddar.
- Return to oven and bake for 6–8 minutes until cheese is melted and bubbly.
- Let cool for 5–10 minutes.
- Garnish each chip with 1/2 teaspoon sour cream and 1/4 teaspoon chopped chives.
- Serve warm or at room temperature.
