Ingredients

  • ½ Cup Oil Or Fat (Bacon Drippings, Sausage Grease, Butter, Or Neutral Oil)
  • ½ Cup All-Purpose Flour
  • 5 ¾ Cups Milk Or Heavy Cream (5.5 To 6 Cups)
  • 1 Teaspoon Salt And Black Pepper, To Taste

Instructions

  1. In a large skillet or saucepan, heat oil or fat over medium heat.
  2. Whisk in flour to form a roux. Stir constantly until small bubbles form and mixture turns golden, about 2–3 minutes.
  3. Slowly pour in milk or cream, whisking continuously to prevent lumps.
  4. Continue cooking and whisking until gravy thickens to desired consistency, about 10–12 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot over biscuits, mashed potatoes, chicken-fried steak, or breakfast dishes.
