For the Apricot Braised Pork Chops

Ingredients
- 1 ½ cups chopped apricots
- ⅓ cup apricot preserves
- 1 tablespoon hoisin sauce
- 1 tablespoon reduced sodium soy sauce
- 3 pieces pork chops (6 oz each)
- 2 teaspoons olive oil
- 1 to taste salt
- 1 to taste pepper
Instructions
- Brine pork chops in lightly salted water for 30 minutes, then pat dry.
- In a bowl, combine chopped apricots, apricot preserves, hoisin sauce, and soy sauce. Stir until well blended—this be your golden glaze.
- Season pork chops with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Lightly brown pork chops on both sides, about 2–3 minutes per side.
- Pour in the apricot mixture. Bring to a simmer, then cover and reduce heat to low. Simmer for 10 minutes, or until pork reaches 145°F and sauce thickens slightly.
- Serve hot over rice, spooning extra sauce atop each chop like treasure on a plate.
